Ingredients:

300g rolled oats

50g sunflower seeds

50g pumpkin seeds

2 tbsp olive oil

12ml honey or maple syrup

1 tsp vanilla extract

100g almonds

100g dried cranberries (or any dried berries of choice)

50g coconut flakes or desiccated coconut
Method:

Preheat the oven to 150Β°C (fan 130Β°C) / gas mark 2. In a large bowl, mix the oil, honey, and vanilla extract.

Add the oats, seeds, and almonds to the mixture, stirring well until evenly coated.

Spread the granola onto two baking trays and bake for 15 minutes.

Remove from the oven, stir in the dried fruit and coconut, then bake for another 10-15 minutes until golden brown and crispy.

Allow the granola to cool completely on a flat tray before transferring it to an airtight container.
