Lemon & Poppy Seed Cupcakes 🧁🍋

When it comes to cupcakes- we just absolutely love them and can eat so many! There are so many flavours so we thought why not bake some healthier ones to make sure we can enjoy more without the guilt! Lemon and poppy seeds make an incredible combination, that citrus kick with that nutty poppy seed flavour is just so tasty! With our recipe you'll be making a healthy cupcake so you can feel less guilty when eating them! Perfect for when you want a little extra protein or a lighter dessert cupcake! 



-150g light soft brown sugar

-150g butter (unsalted) 

-2 eggs

-150g self raising flour

-Zest of 1 lemon

-Juice of 1/4 lemon

-40g poppy seeds

-1tsp baking powder

-4tbsp natural yogurt




1. Start off by preheating the oven to 180°C (160°C fan, gas mark 4). Then line a cupcake tin with 12 cases.

2. Next put the butter and the sugar into a mixing bowl and beat with a wooden spoon or electric mixer until it's light and fluffy. Gradually beat in the eggs one at a a time until smooth. 

3. Next stir in the rest of the flour and then add the baking powder, lemon zest, lemon juice, poppy seeds and yoghurt, combining until you have a smooth mixture. 

4. When you have the perfect mixture, divide it between the cupcake cases. Bake for 18-20 minutes until golden brown and then insert a knife or cocktail stick into the middle of one and if it comes out clean then they're ready. 


Allow to cool before serving..,if you can wait that long 🤣


You can eat them as they are, enjoy with a hot cuppa, top with icing or enjoy with extra fruit, ice cream or cream...there are so many options so we hope you enjoy these yummy, light and healthier cupcakes!
