Mini Lemon Cheesecakes 🍋

Prep Time: 25 minutes. Set Time: 2 hours. Serves: 6

These mini lemon cheesecakes are perfect for a light refreshing dessert after a heavy meal or just when you feel like a citrus kick from a sweet dessert. With that buttery, crumbly base and that light and refreshing cream cheese lemony filling you'll absolutely love these! The perfect dessert you can make in advance and a great choice to make for guests.   

 

Ingredients:

For the cheesecake filling:

 

-200g cream cheese

-50g icing sugar

-2 medium lemons, (juice and zest)

-150ml double cream

 

For the biscuit base:

 

-150g digestive biscuits

-60g butter (melted)

 

 

Method:

 

1. Start off by crushing the biscuits and mixing in the melted butter until combined. Next press down into your serving dishes, making sure there are no gaps. You'll need to fill about 1/4 of the bowl with the biscuit mixture. Now place in the fridge to set a little while you make the filling. 

 

2. Next whip the double cream until you start to form soft peaks and the cream has thickened. 

 

3. Then add in the cream cheese, sugar and lemon juice and zest from 1 lemon and combine well. 

 

4. Now that you have your filling, place the mixture evenly into the servings bowls and top with some more lemon zest as a garnish. 

 

5.Place the cheesecakes in the fridge to set for at least 2 hours before serving.
