Red Pepper & Tomato Soup 🍅🌶
With the weather cooling down a little we made our delicious red pepper and tomato soup with homemade croutons this afternoon. We kind of missed food like this during the past week with the heatwave but it was too hot for soup. However today was the perfect temperature 😉
What's your go to soup? 😋
Ingredients Needed:
-1 red pepper
-1 red onion
-1 red chilli
-3 large vine tomatoes
-4 garlic gloves
-2 sprigs of thyme
-500ml vegetable stock
Method:
1. Start off by chopping up your vegetable into large chunks and placing on a large baking tray and drizzle with olive oil.
2. Next roast it all in the oven for 20 minutes, turning half way through.
3. While the vegetables are cooking, make some vegetable stock.
4. Once the vegetables are ready, add them to a blender together with the vegetable stock and blitz for a few minutes.
5. Add the soup to a large saucepan and simmer for 10 minutes until nice and thick.
6. Serve hot with homemade croutons (recipe for croutons can be found on our blog too).
