Roasted Cauliflower With Pomegranate šŸ˜‹šŸ„°

This roasted cauliflower with pomegranate is a perfect dish for when you want something healthy and fresh. The colours are just incredible and really make you want to eat it. It's such a simple dish to makeĀ which is packed fullĀ packed full of flavour and as an added bonus you can make this as aĀ main dish to have to salad, fill it in pitta pockets with your favourite dips, have it as part of your picnics or even apart of your bbq's.Ā

Ingredients Needed:

Ā 

-1 head of cauliflower (cut in small florets)

-2 tbsp olive oil

-1 tsp turmeric

-1 tsp cumin

-1 tsp chilli flakes

-1 tsp pepper

-1 tsp salt

-1 tsp garlic powder

-1 tsp paprika

-1 large red onion- (sliced)

-1 pomegranate (de-seeded)

-A handful of coriander (chopped)

Method:

Ā 

1. Start off by preheating the oven to gas mark 6/ 400F/ 200C and lightly grease the tray with olive oil.Ā 

2. Next in a large bowl add in the cauliflower, red onions, all the spices, seasoning and theĀ olive oil. Mix everything together until it's all combined and the cauliflower is completely coated.Ā Ā 

3. Bake it the oven for 20-25 minutes, turning overĀ half way through.Ā 

4. Once baked serve immediately with a sprinkling of pomegranate seeds and coriander!
