Soft & Chewy Chocolate Chunk & Cranberry Cookies 🍪🍫🍇

We've baked up a special batch of these delicious cookies to enjoy while we watch The Great British Bake Off final tonight!! (If they last until then 🤣)

They melt in your mouth and are so scrumptious...you'll love them 😍

Here's how to make them:

Ingredients:

-120 g unsalted butter, diced, plus extra for greasing
-100 g granulated sugar
-80 g light brown sugar
-1 tsp natural vanilla extract
-1 medium egg
-250 g plain flour
-1 tsp bicarbonate of soda
-1 pinch fine sea salt
-100g chocolate chunks chips
-50g dried cranberries

Method:

1.Preheat oven to 170°C and grease 2 baking trays.

2. Place butter, granulated sugar, light brown sugar, vanilla extract, egg, flour, bicarbonate of soda and salt in mixing bowl then mix until well combined.

3. Next add in the chocolate chunks and cranberries and mix well.

4. Shape into small rounds (approx 4 cm) and place onto prepared baking trays about 5 cm apart to allow room for them to spread.

5. Bake for 10-12 minutes until golden brown and still slightly soft. Cool for 5 minutes before transferring to a wire rack to cool completely. Once cool, store in an airtight container until ready to serve.

These cookies will last for about 5 days if you're lucky 😋 Enjoy!!
