Summer Chickpea Salad 🥗😍

Prep Time: 10 minutes. Serves: As many as you like 😉

Chickpeas are so versatile and we enjoy making so many recipes with them but this has to be one of our favourites for summer. This is a protein packed summer salad that has all the elements of a tasty dish that you will just love! With so many ingredients coming from all the major food groups this is a great recipe for lunch or even dinner! 😋

No measurements...simple ingredients:

-Chickpeas
-Cucumber
-Tomatoes
-Red Onions
-Peaches
-Sweetcorn
-Feta Cheese
-Chives
-Your choice of sauce/dressing (we added some sweet chilli sauce to add a bit of spice) 🔥

 

Method:

 

1. Place all ingredients in a large bowl and mix together!

 

2. Drizzle over your favourite sauce/dressing and enjoy!

 

That's it....how easy is that? Flavour too good to be true? Not at all 😉
