The Pesto's Yet To Come... 😉

When summer arrives, we love making our own sauces and not just that but dips that can be used for many different dishes! When it comes to the colour all we can say is green is our colour and what better sauce to make than pesto! Pesto is so versatile- you can have it with cold dishes such as salads and warm dishes such as pasta. We love Italian food as most of you know and pesto is definitely a staple for us to have in the fridge, ready when we want it!

One of our favourite salads to have it with is the classic Italian Caprese salad, sliced mozzarella with large sliced vine ripened tomatoes, drizzled with our homemade pesto and a balsamic glaze...absolutely incredible!!! 😋🍅🥗

 

The recipe for our homemade pesto is: 

 

Ingredients:

 

-80g walnuts

-4 garlic cloves

-250g basil leaves

-1/2 tsp salt

-1/tsp black pepper

-75g parmesan cheese (finely grated)

-100ml olive oil (add more for your perfect consistency) 

 

Method:

 

1. Start off by adding the walnuts and garlic into a food processor and process until it looks like a fine breadcrumb mixture.

2. Next add in the basil leaves, salt, pepper and process until you see it all blended nicely and reach a smooth paste.

3. Finally add in the cheese and olive oil and pulse on a low speed until you see a smooth consistency (add more olive oil if you wish).

Store in an airtight glass jar/container and keep in the fridge for up to 3 days!

Enjoy this amazing sauce with anything you like- get creative serve as a snack, as part of a starter, a main or even a dessert 😉 because lets face it... 

Pesto is the besto!!! 😋❤️
